These Poke Nachos are made with crispy Wonton Wrappers, Ahi Tuna, Avocado and Jalapeños topped with a ginger soy glaze and a spicy mayo and sprinkled with Green Onion. Simple ingredients that create a flavor and texture explosion in a dish that is sure to become a new favorite!

Ingredients

  • 4 Cups Vegetable Oil Just enough to fill the bottom 2 inches of your pot.
  • 25 Wonton Wrappers
  • 5 Ounces Frozen Ahi Tuna, thawed
  • 1 Avocado cut into ¼ inch cubes
  • 1 Fresh Jalapeño, sliced thinly or ¼ Cup Jalapeños from a Jar
  • 1 Green Onion, sliced thinly
  • ½ Cup Mayonnaise
  • 1 tablespoon Sriracha Sauce

Ginger Soy Glaze

  • Cup Soy Sauce
  • ½ Cup Water
  • 1 tablespoon Rice Vinegar
  • 1 teaspoon Toasted Sesame Oil
  • 1 teaspoon Fresh grated ginger
  • 1 Garlic clove, minced
  • 2 tablespoon Brown Sugar
  • 1 tablespoon Corn Starch
  • Cup Cold Water

Instructions

Won Tons

  • Heat Oil in a heavy Stock Pot or Dutch Oven to 350°
  • Add wonton wrappers 4 at a time, making sure they stay separated.
  • Fry for about 1 minute per side, so that both sides are browned.
  • Remove them carefully from the oil and place them on a plate lined with a paper towel. If you are using a gas stove, turn the gas burner off when you remove the wontons. Turn it back on before you add the next batch of wonton wrappers to the oil.
  • Continue until all wonton wrappers are browned.

Ginger Soy Glaze (You may use Teriyaki Sauce instead if you prefer)

  • Add all ingredients except cornstarch and ⅛ cup of water to a saucepan on medium heat.
  • While these ingredients are heating, mix together the cornstarch and ⅛ cup water. Stir until cornstarch is dissolved.
  • When soy sauce mixture begins to simmer, add cornstarch and water mixture.
  • Stir to combine and bring to a simmer. Simmer until it reaches desired thickness.
  • Remove from heat.
  • Once it has cooled completely, add a little of the sauce to a bowl with the cubed Ahi to marinate it slightly.
  • Set aside remaining sauce for later.

Assembling the Poke Nachos

  • Lay fried wonton wrappers in a single layer on a large platter.
  • Top Wontons with Ahi Tuna, Avocado and Jalapeños, so that all wontons have a little of each.
  • Drizzle wontons with Spicy Mayo and Ginger Soy Glaze.
  • Sprinkle Green Onions over all wontons.
  • Serve and Enjoy!
