Sticky Pomegranate Ginger Chicken

This is one of my favorite, easy and flavorful dinner, ever! Ginger and Garlic work together to create their flavor magic and combined with the soy, honey and pomegranate, a tangy, sticky sweet sauce is created that you will want to spoon all over your chicken and over your rice, as well. You won't want to waste a bit!

Ingredients

  • ¼ Cup Pomegranate Juice
  • ½ Cup Soy Sauce or use Tamari or Coconut Aminos to keep it gluten free
  • 1 Cup Honey
  • 10 Garlic Cloves chopped or minced
  • ½ Cup Fresh grated Ginger Root
  • 8 Chicken thighs with bone in and skin on

Instructions

How to put it all together

  • Preheat oven to 350°
  • Grate Ginger root and Chop garlic
  • Place pomegranate juice, soy sauce, honey, garlic and ginger in sauce pan and warm it until honey is melted.
  • Place chicken thighs in baking dish with skin side down.
  • Pour sauce over chicken thighs and cover tightly with aluminum foil.
  • Place in fridge and let it marinate overnight.
  • Remove from fridge and place in oven and bake for 30 minutes
  • Pull from oven and remove foil and turn chicken skin side up.
  • Return to oven and turn heat to 375° and cook for 30 more minutes until skin is browned.
  • Serve over rice with lots of delicious sauce!

Notes:

  • If you would like to keep this recipe gluten free, you may substitute for Tamari or Coconut Aminos for the Soy Sauce. If you use either of these instead of soy, add an additional teaspoon of salt.
