Stuffed Dates Party Poppers

This stuffed dates recipe is a party (popper) in your mouth! These little appetizers are made by stuffing whole dates with gorgonzola cheese and wrapping it in phyllo dough and topping them with pop rocks. It is a little phyllo firecracker! They are sweet and salty phyllo firecrackers that pop and crackle in your mouth!

Ingredients

  • 12 Fresh, whole Dates
  • ¾ Cup Crumbled Gorgonzola Cheese
  • 9 Sheets Phyllo Dough
  • ½ Cup Butter, melted
  • 2 tablespoon Honey
  • 2 Packets Popping Candy (about ½ ounce)

Instructions

  • Pre-heat oven to 350℉.
  • Make a slice on one side, down the length of the date and open it up and remove the pit. Repeat with all dates.
  • Place a small amount of gorgonzola cheese in the date and press it together to seal. Repeat with all dates.
  • Cut each date in half through the short side.
  • Make a slice down the length of the date and open it up and remove the pit. Repeat with all dates.
  • Cover the unused sheets of phyllo with a lightly damp dishtowel while you work so that they do not dry out.
  • Carefully take one sheet of phyllo dough and lay it on the counter, lightly brush it with melted butter.
  • Lay a second sheet of phyllo on the first sheet and brush it with butter.
  • Add one more sheet of phyllo on the first two, brush it with butter and then cut it in half the long way, and then make 3 cuts in the other direction to create 8 phyllo squares.
  • Repeat this process 2 more times so that you have 24 squares.
  • Place one date half, cut side down in the middle of each of the squares.
  • With each square, pull the 4 corners up over the top of the date (like wrapping a candle in tissue paper) and pinch to seal (where you would tie the ribbon around the wrapped candle).
  • Place wrapped dates on a baking sheet lined with parchment paper.
  • Bake at 350℉ for 15 minutes or until golden brown.
  • After pulling them from the oven, let them sit for 10 minutes to cool.
  • After 10 minutes, drizzle the top of each of the wrapped dates with a little bit of honey.
  • Sprinkle a pinch of popping candy over each of the dates.
  • Place them on a platter and serve!

Notes

  • Feel free to use any color/flavor popping candy. Multiple colors would be so much fun for a birthday party!
  • Drizzle just a little bit of honey over each date. It is meant to add a teeny bit of sweetness, but mainly to give something to help the popping candy stick.
  • Make sure to keep the Phyllo sheets covered lightly with a damp dish towel to prevent them from drying out as you work.
