Cottage Cheese Bread

It may not have the most appetizing name, but this high protein bread is light and fluffy and flavorful. You'll have no idea that it contains just 6 ingredients, including cottage cheese and egg whites, making it a protein powerhouse with 13 grams per slice!

On my quest to get more protein into my diet, I have been exploring the different ways to use cottage cheese. It is a great source of protein, and then add eggs or egg whites to the (literal) mix, and it is easy to up the protein in many favorite recipes.

This particular recipe makes a good yeast bread that is slightly reminiscent of (savory) angel food cake and is delicious used for anything from sandwiches to french toast.

I am working on making a high protein cinnamon roll using cottage cheese, so stay tuned!

Ingredients

  • Bread Flour- You may use All-Purpose instead, but it will create a slightly denser and slightly lower protein bread.
  • Cottage Cheese- Feel free to use whole fat, low fat, or non fat.
  • Egg Whites- You may use liquid egg whites that you buy in a carton, or separate your own egg whites. This recipe will require 6 eggs to make ยพ cup egg whites.
  • Active Dry Yeast- 1 Packet which is ยผ ounce.
  • Water- to activate the yeast.
  • Sugar- to help activate the yeast.
  • Salt- Crystal Kosher salt is best but if you don't have this, you can use table salt, but reduce the amount to 2 teaspoons.

Why you'll love this recipe

  • Healthy and High Protein- There is no oil in this recipe, and just a teeny bit of sugar to activate the yeast, so it is a really healthy way to get your protein and your bread too!
  • Easy Bread Recipe- If you have never made a yeast bread, this is a really easy intro into how they work. It can seem intimidating, but once you have done it, you'll see there is really not much to it. With just a little elbow grease and patience and you're rewarded with a really good bread!
  • Simple, Inexpensive Ingredients- Use liquid egg whites in a carton to save time and money without having to use up your eggs! Cottage cheese and yeast are easy to find and cheap. Flour, sugar and salt are ingredients you should already have on hand. That's all there is to it!
  • Versatile- Use this bread for anything from sandwiches, to french toast, or even use it to make these Air Fryer Croutons!

How to make this Cottage Cheese Bread

  1. Start by blooming your yeast. To do this, pour the yeast and sugar into a large bowl and then add the very warm water. The water should be between 100-110ยฐF. If you don't have a thermometer to check temperature, just use very warm tap water. It should be very warm, but you should be able to hold your finger under the faucet while it runs. Stir the yeast and sugar into the water and then let it sit for about 5 minutes while the yeast gets to work blooming.

  1. While the yeast blooms (gets foamy), place the cottage cheese and the egg whites into the blender. Blend them on medium speed for 30 seconds. They should be smooth and foamy.

  1. In a separate bowl whisk together the bread flour and salt.

  1. Once the yeast has gotten foamy, pour the egg white and cottage cheese mixture into the bowl with the yeast. Mix everything together then add the flour and salt. Use a wooden spoon or dough whisk to mix everything together. It should create a shaggy dough.

Remove your rings, bracelets and watches before you start kneading! Trust me, you'll be glad you did! โ˜บ๏ธ

  1. Flour your counter or work surface with about ยฝ cup flour. Dump your dough out onto it and then remove your jewelry and get to kneading! To do this, fold the dough over itself, toward you, then use the heels of your hands to push it down and away from you. Spin the dough ยผ turn and knead again. Continue this for 5-6 full minutes. It will get tougher and more elastic as you go. You will know it is ready when you poke the dough and it kind of springs back.

  1. Once you are done kneading, form the dough into a ball and place it back in the bowl that had the flour and salt. Cover it with a dish towel or plastic wrap and place it in a warm place (like on the stove, or on top of the fridge) for 1 hour while it rises.

  1. While it is rising, grease a 9x5 loaf pan, and then line it with parchment paper. It only needs to be lined on the long sides of the pan, as is shown in the ingredients picture.
  1. Once it has almost doubled in size, dump the dough out onto the counter and use your fingers to smash it down and form it into a rectangle.

  1. Then roll it into a log, starting on the short end. It should be about 8 or so inches wide. Short enough to fit in your 9 inch bread pan.
  1. Now, you will need to cover it again and let it rise one more time, but this time just for about 25 minutes. While it is rising, preheat your oven to 400ยฐF.

  1. Once it has gotten poofy and filled your pan, it is ready to pop in the oven! Set your timer for 40 minutes, but check it after 20. The top will probably be pretty brown by now, so loosely place a piece of tin foil on top to keep it from browning any further. Let it continue to bake for the last 20 minutes.
  1. Pull it from the oven, and tap the top, it should be crisp and browned. Let it cool in the pan.

Ingredients
  

  • 1 active dry yeast packet (ยผ ounce)
  • 1 teaspoon sugar
  • ยผ cup lukewarm water (100-110โ„‰)
  • ยพ cup egg whites
  • ยพ cup cottage cheese
  • 4 cup bread flour
  • 1 tablespoon kosher salt

Instructions
 

  • In a large bowl combine the active dry yeast and the lukewarm water and sugar and set it aside to bloom (get frothy). This should take 5-10 minutes.
  • In a blender, or food processor add the cottage cheese and egg whites. Blend them for about 30 seconds until they are all combined and smooth.
  • Add the egg whites and cottage cheese mixture to the yeast mixture and whisk it together to combine.
  • In a separate bowl whisk together the flour and salt.
  • Add the flour and salt to the egg white cottage cheese yeast mixture and stir it all together just until there are no dry flour spots left. You should have a shaggy, slightly sticky dough. Don't over mix, or it will make the bread tough.
  • Flour your work surface and then dump the dough out onto it. If you have a stand mixture and a dough hook, you can use this to knead your dough. Otherwise, roll up your sleeves, remove your rings and start kneading! ๐Ÿ™‚ Put some flour on your hands to prevent the dough from sticking, and set the timer for 5 minutes and then knead the dough until it becomes tough and bounces back when you poke it.
  • Once you have kneaded it, form it into a ball and then place it back in the bowl. Cover it with a dish towel and place it in a warm spot like on top of your fridge, or on your stove. Let it sit for one hour.
  • Once it has rise and almost doubled in size, dump the dough back onto the counter and punch it down to remove the air. Try to punch it down and shape it into a flat rectangle.
  • Grease a 9x4 inch bread pan with butter or cooking spray and then line it with parchment paper.
  • Roll the dough into a log shape and place it seam side down into the loaf pan.
  • Cover the bread dough again with a dish towel and set it aside to rise for about 25 minutes in a slightly warm place (like on top of your fridge, or on top of your oven).
  • Preheat your oven to 400โ„‰ and let it heat while your bread dough rises.
  • Bake it for about 40 minutes on a low to middle rack. It will poof up so make sure there is room for it to grow. Check it after about 20 minutes and if the top is browned, loosely place a piece of tin foil on top to prevent it from browning any further.
  • After 40 minutes pull it from the oven and tap on the top of the bread. If it is crusty and sounds hollow, it is done! Let it cool completely before removing it from the pan.
  • Slice and enjoy! ๐Ÿ™‚

  • Bread flour adds more protein than all-purpose flour, but you may substitute if you don't have bread flour.ย 
  • This bread will freeze well for a month or so. Tightly wrap it in plastic wrap and place to keep out as much air as possible.ย
