Easy Peach Dump Cake with Fresh Peaches

Peach dump cake, or lazy cake, as it's also known, is probably as the name suggests, the easiest way to make a cake. Not only is it delicious, but it is perfect in a pinch when you need a quick, last minute dessert, or just don't feel like dirtying a bunch of dishes. Try it and you will see why it is a delicious and simple classic!

As much as I hate to admit it, summer is winding down, so I am looking for ways to get all the fresh fruit and veggies I can while they are straight from the garden! Well, not my garden, unfortunately, but the gardens of those talented green thumbed gardeners and farmers here in Montana.

I had some peaches that were starting to get very ripe, and the clock was ticking on them. I thought this super simple dump cake was a perfect quick and easy way to use them up. It hurts a little to use a cake mix, but in this situation, it works, and tastes darn good! So here we go!

Ingredients

  • Peaches- In this recipe, we use fresh peaches, but feel free to substitute canned or frozen peaches.
  • Brown Sugar- Just a little extra caramelly sweetness from brown sugar. You'll need a little more if your peaches aren't very ripe.
  • Almond Extract- Almond extract is a nice change from vanilla and goes so well with peaches! You can use vanilla extract if you don't have almond extract on hand.
  • Cake Mix- Use your favorite yellow box cake mix. Or, feel free to substitute a different cake mix flavor if you'd prefer.
  • Butter- A stick and a half of butter melts into the cake mix and peaches creating that gooey delicious dump cake.

How to Peel Peaches

This technique makes peeling peaches so easy!

Start by putting a pot of water on to boil.

While that water is heating, use a paring knife to cut little "x's" on the bottom of each peach.

Once the water has come to a boil, place the peaches in the water and set your timer for 30 seconds. After 30 seconds, take them out of the boiling water and place them in an ice water bath. Once they have cooled, start at the x on each peach and peel the skin off. It should come off super easily!

How to make Peach Dump Cake

Once your peaches are peeled, cut them into about 1 inch chunks and place them in a greased baking dish that is about 9x13". Sprinkle the peaches with the brown sugar, and almond extract and toss them all together.

Next, sprinkle the cake mix over the peaches. Give the pan a little shake, shake shake, to make sure the cake mix is spread evenly over the top, but don't stir it together!

Cut the butter into 1 tablespoon pats and place it spread out evenly on the cake mix.

Bake the cake in a 350ยฐF oven for 45 minutes until it is golden brown.

Let it cool for a few minutes before serving it with a big scoop of vanilla ice cream, or whipped cream. Enjoy!

Tips for the best dump cake

  • Use fresh, ripe peaches. This is kind of like how you use very ripe bananas for banana bread. The riper they are, the sweeter they are. It is the same with the peaches in this recipe. It is a perfect way to use up your very ripe peaches and you get away with using less sugar this way too!
  • Don't Stir- layering is key! One of the best things about this recipe is how little you have to do to make it a success. This includes not stirring. Just sprinkle the cake mix on top of the peaches and then shake the pan a little so that the cake mix settles. That's all you need to do!
  • Serve warm- This peach cake is best served warm with vanilla ice cream or whipped cream!

Options

  • Spices- Feel free to add ยฝ teaspoon cinnamon, or pumpkin pie spice to spice it up and make it feel a little more "Fall" and a little less "Summer".
  • Nuts- Sprinkling ยฝ cup chopped pecans, walnuts or almonds on top adds a little more texture and flavor that is so good.
  • Different cake mix- Don't be afraid to use a different flavor cake mix! Some recipes call for a spice cake, you cold also use a white cake, or even chocolate!
  • Make it gluten-free by using GF cake mix.

Frequently Asked Questions

Do I have to peel the peaches?

This is 100% personal preference. When the peaches are cooked down, the skin becomes soft and thin and you really barely notice it, so I don't think it is entirely necessary, but with the method listed in this recipe, it is easy to peel them, so it is chef's choice!

How do I store leftovers?

Leftovers can be covered and stored in the fridge for up to 4 days. You can also store this cake in a sealed container in the freezer for up to 4 months. To reheat, simply cover with foil and warm in a 300ยฐF oven for 45 minutes.

Can I make a dump cake without cake mix?

Yes! If you would rather make your own cake mix, simply sift together 1 ยฝ cups all-purpose flour, ยฝ cup white sugar, 2 teaspoons baking powder and ยผ teaspoon salt.ย Sprinkle that over the peaches as you would the cake mix.

Ingredients

  • 1 box yellow cake mix
  • 1 cup butter
  • 2 lbs peaches, cut into 1 inch chunks (7-8 peaches)
  • ยผ cup sugar, or ยฝ cup if your peaches are not very ripe
  • ยฝ teaspoon amaretto

Instructions

Prepping the peaches

  • Preheat the oven to 350โ„‰.
  • Bring a large pot of water to a boil, and fill a large bowl with ice water.
  • While the water is heating, use a paring knife to cut a small x in the bottom of each peach like in the picture above in the post.
  • Place the peaches in the boiling water for 30 seconds.
  • Then remove the peaches from the boiling water and immediately put them in the bowl of ice water to shock them and stop them from cooking.
  • Once they are cooled, peel the skin off of each peach, starting at the x on the bottom.
  • Once the peaches are peeled, cut them in half, remove the pit and then cut the peach into about 1 inch chunks.

Making the Peach Dump Cake

  • Put the peaches into a 9x13" baking dish.
  • Add the brown sugar and almond extract and toss everything together.
  • Sprinkle the cake mix over the peaches and shake the pan so that they cake mix is an even layer.
  • Cut the butter into 1 tablespoon pats and place them evenly spaced on the cake mix.
  • Pop the cake in the oven and bake for 40-45 minutes, until the it is golden brown.
  • Serve with vanilla ice cream, or whipped cream. Enjoy!

Notes

Notes:

  • If you would like to use canned peaches, you will need 2 16 ounce cans of peaches in heavy syrup. You can use peaches in light syrup as well for a little less sweetness.
  • You can use frozen peaches as well! For this, use about 4 full cups of frozen peach slices or chunks.
  • Feel free to add ยพ cup chopped pecans, walnuts or slivered almonds to the topping for a little added texture and crunch.
  • If you don't have almond extract on hand, you can use vanilla instead.
  • Feel free to use a different flavor cake mix such as spice, or white cake.
  • Dump cake can be stored in the fridge for up to 4 days.
  • It can be stored in the freezer for up to 3 months. To reheat, cover with foil and warm it in a 300ยฐF oven for 30-45 minutes.ย 
  • If you would rather make your own cake mix instead of a box, simply sift togetherย  ย 1 ยฝ cups all-purpose flour, ยฝ cup white sugar, 2 teaspoons baking powder and ยผ teaspoon salt. Sprinkle it over the peaches as you would a box mix!
