This quick and easy, 3 ingredient Pistachio Mint Pesto is simply made with fresh Mint, roasted Pistachios and Olive oil. These three ingredients pack this pesto with fresh and vibrant flavor. It is vegan, gluten free, and dairy free, so it is a versatile and a flavorful heart healthy addition to accommodate any of these dietary requirements.

How to make Pistachio Mint Pesto

This truly is so simple! Simply place the Pistachios in a food processor and pulse a few times, until they are coarsely chopped. Then add the Mint and do the same. Finally, drizzle the Olive oil in while the food processor is running. That is it! If you are using roasted and salted pistachios, you may not even need to season it. If you are using Pistachios that are not salted, just add salt until it fits your taste preference. Yum!

What to do with Pistachio Mint Pesto?

Honestly, what NOT to do with it?! It is literally, only nuts, olive oil and herbs. Is there a more intensely flavorful, hearty healthy sauce? If so, I really don't know what it would be!

You can use it with savory dishes such as pasta, pizza, or flatbread. It is also a delicious sauce for roasted lamb or lamb and veggie skewers, as well as this Vegetable Couscous with Mint Pesto. Not only that, but it is delicious paired with sweets, too!

If you like things very sweet, then just add a bit of honey and add a dollop to your strawberry shortcake, or as a topping for vanilla ice cream! I know it sounds weird- but let me know what you think if you try it!

Ingredients

  • ยฝ Cup Shelled Roasted Pistachios
  • 2 Cups Fresh Mint Leaves (stems removed)
  • ยฝ Cup Olive Oil

Instructions

  • Add Pistachios to Food Processor and pulse a few times until they are coarsely chopped.
  • Add Mint Leaves and pulse a few times until they are coarsely chopped.
  • Slowly pour Olive Oil into Food Processor while it is running.
  • Season with salt to taste.
  • Serve, or place in a container for later use. Enjoy!

Notes

  • If your pistachios are salted, you may not need to season the pesto with any salt at all. If they are unsalted, slowly add a little salt until it is seasoned to your taste preference.
  • Adding a little bit of honey also makes this a delicious sweet sauce. It is delicious on strawberry shortcake, wrapped in phyllo dough, and even on ice cream!ย ย
