This Strawberry Salad with Creamy Lemon Dressing is light, colorful and full of flavor! Full of fresh avocado, strawberries, green onions, mint, and a sprinkle of creamy blue cheese and almonds. All of these ingredients are set off by a tangy, sweet and creamy lemon dressing made with only 4 ingredients! It is so easy, and once you make it, you won’t want to buy dressing from the store ever again!
What is in this Salad?
This base of this salad is a bed of mixed greens. Of course if you have the option to buy your greens from a farmers market (or grow them yourself!), this is the absolute best. My favorite thing about summertime food is all the fresh veggies-especially the greens. So, the fresher the better, but a good mixed greens bunch is the base.
Fresh Strawberries, Avocado, Mint, Green Onions and creamy Blue Cheese and crunchy Almonds are next. This combo gives this salad a sweet, fresh flavor and creamy and crunchy texture. This salad really does hit all the best flavors and mouth feels!
The Dressing completes the deliciousness. Made with fresh lemon juice, Apple Cider Vinegar, Mayonnaise and a little sugar to sweeten it up. You can also sweeten it with honey, monk fruit, or your favorite alternative sweetener. It will just change the flavor slightly, but will still make it sweet and delicious.
How to make the Dressing…
This dressing is so easy! Simply add the mayonnaise to a medium sized bowl. Add the Lemon Juice and Sugar and a dash of salt and pepper and whisk it all together until it is nice and creamy. That’s it! Cover and place in the fridge until you are ready to assemble your salads.
How to Put it all together…
My favorite way to serve this is as side salads in individual bowls. To assemble, place the mixed greens in the bowls, then drizzle each one with a little bit of the dressing. Add the Avocados, Strawberries, Blue Cheese and then drizzle more of the dressing all over. Finally, top everything with the Mint, Green Onions and a sprinkle of chopped or slivered Almonds. Grind a little Salt and Black Pepper on top if you would like, and serve!
Alternative Options…
If you would like to make this salad a main course, simply double the recipe, or if it is just for you, or two of you, this recipe should be enough. I am pretty sure that I would have no problem devouring this whole recipe all by myself. I always want more! ????
Another option, to make it a bit more substantial is to add sliced chicken breast, or shredded chicken. I love doing this if I have a grilled chicken breast left over or a rotisserie chicken in the fridge. It just beefs up (chickens up?) your salad and adds more good flavor and texture.
Finally, if you don’t have any Apple Cider Vinegar on hand, you can use extra lemon juice, or substitute Rice Vinegar instead. Whichever combo you use, make sure it adds up to 1/4 cup. Any of these options will add the same good, tanginess. I promise it will be just as delicious!

Strawberry Salad with Creamy Lemon Dressing
Ingredients
- 5 Ounces Mixed Greens
- 1 Cup Sliced Strawberries
- ½ Avocado, cut into small chunks
- ½ Cup Crumbled Blue Cheese or Gorgonzola
- ½ Cup Whole, or slivered Almonds
- 2 Tbsp Fresh Mint, chopped
- 2 Green Onions, thinly sliced
Sweet and Creamy Lemon Dressing
- 1 Cup Mayonnaise
- ¼ Cup Apple Cider Vinegar
- 2 Tbsp Lemon Juice
- 2 Tbsp Sugar
- Dash Salt and Pepper
Instructions
- Divide mixed greens evenly between 4 bowls
- Drizzle greens evenly with about a couple Tablespoons of the dressing.
- Add Avocado, Strawberries, Almonds, Blue Cheese.
- Drizzle a couple more tablespoons of dressing evenly between the 4 salads.
- Sprinkle salads with Mint and Green Onions.
- Season with dash of salt and pepper and Serve!
Notes
- This recipe should make plenty of dressing. You most likely will have some left over. When adding the dressing to the salads, add it to suit your preference. There are so many good flavors in the salad, you shouldn’t need an overly large amount of dressing~ unless that is how you like it! In which case, you should have enough to go crazy! 🙂
- If you don’t have Apple Cider Vinegar, you can substitute Rice Vinegar, or use all Lemon Juice. Whichever combo you choose, make sure it adds up to 1/4 cup. Any combo will be delicious!
