These Easy Infused Cocktail Ice are such a great way to spice up a cocktail! They are a fun way to break the ice (ha!) and get a party started. My honey is the mixologist in our house and our parties always start off with lots of oohs and aahs when he hands out his fancy cocktails. It is such a fun topic of conversation and unique show piece. One component that adds just as much, if not more character and flavor as a salted or sugared rim, is fancy ice. It doesn’t get nearly as much attention as garnishes, but it is just as much fun! These Infused cocktail Ice molds aren’t just for cocktails. They are also perfect to spice up a glass of sparkling water, lemonade or ice tea!
Here are the two super easy infused cocktail ice cubes that I love to use when I have girlfriends over for summer lunch on the deck. I just make a tray of the lemon rose cubes and a few flowered ice spheres at the start of summer. That way I have them in the freezer, ready whenever the girls come over! I promise, everyone will love them!
What you’ll need to Create these Cocktail Ices…
The first thing you need is an ice cube tray or ice molds. There are a million different options as far as shapes for your ice mold. You can make these cocktail ice cubes with any mold you’d like. The O.G. mold, the ice cube tray works just fine, but you can also get spheres, large cubes, or all kinds of novelty shapes.
The next thing you need are herbs, flowers, and citrus. These are what create the “infused” part of this cocktail ice. These particular ice spheres are made with chamomile, mint and lavender. I used these because they were easy to access, right in my garden. If you don’t have these, there are many other edible varieties such as pansies, johnny-jump ups and nasturtiums that can be used. These are SO colorful and would be a perfect splash of color in any summer cocktail or mocktail.
Citrus fruits are another summer flavor that work well in these ice molds. Not only do they add brilliant summer color, but they also add a citrus-y zest that tastes like summer in a glass! They are the perfect way to spice up a glass of lemonade, ice tea, or add a little extra something to a refreshing Vodka Soda Cocktail.
How to Form the Citrus Rose Ice Cubes
These are so easy to make, all you need besides the ice molds, and fillers is a sharp knife or mandolin and water! I used my 7″ Shun Filet knife for this, it is SO sharp and allowed me to make the slices PAPER thin. Paper thin slices allow them to be bendy and moldable. For these citrus roses, take one slice and roll it up. This will be the center of your “rose”. Next, take a second slice and wrap it around the rolled slice. Continue this with several more slices, while pinching the base to keep them together. When your rose is formed, gently set it into a square ice mold that it small enough to hold the “petals” of your rose in place. Gently pour water into the mold. The rose should stick slightly out of the water.
For the Flower and herb ice, the spheres work well. With this mold style, you can lay the herbs and flowers into the mold, so they are leaning on the side and bottom of the mold. Carefully add water to the line and then gently place the lid onto the top and pop them in the freezer. It’s as easy as that!
How to use your Beautiful Cocktail Ice…
Find a spot in your freezer that is level and place the molds there while they freeze. Let them freeze for a couple of hours and then it will be time for the big reveal!
When you unwrap your cocktail ice, it may look a bit foggy, but as soon as you pour the cocktail or mocktail over, it will clear right up and look so beautiful! These are perfect in a short highball style glass, so you will only need the one large ice mold. If you would rather use a larger glass, (Ha! I like your style!) fill the bottom of the glass with regular ice and then top it with one of your fancy ice molds. This way you will have the fancy effect on top without using up too many of your special cocktail ice molds at once!

I tried the round ice cubes for the first time and used the nasturtiums from my garden which are edible😊. The cocktails were even more fun to enjoy. I’d say it’s a 5 star recipe and great presentation!
