This Thyme and Grapefruit Cocktail is a classy, updated twist on the classic Greyhound cocktail. Made with an herby fresh simple syrup, vodka and grapefruit juice and topped with a splash of sparkling water and garnished with a sprig of thyme. It is a fresh, light and fragrant cocktail. Perfect for everything from casual day on the deck with your girls, to swanky happy hour cocktail party!

  • Grapefruit Juice
  • Sparkling Water
  • Fresh Thyme
  • Sugar

How to make the Thyme Simple Syrup

Simple syrup is just like its name...Simple! And yet there are a million different simple syrups that you can make that all add a flavored and concentrated sweetness to your dish. In this recipe we are using a Thyme Simple Syrup that will add an herby freshness to your cocktail.

To make simple syrup, simply bring your water to a boil. Turn the heat off and add the sugar and a pinch of salt and stir it until it is dissolved. This should only take 30 seconds or so. That's all there is to making simple syrup!

Then, to make it into thyme simple syrup, roll a fresh sprig of thyme in your hands to release some of the oils from the thyme leaves. Drop the whole sprig into the simple syrup and let it steep until the syrup has cooled.

Pour the simple syrup through a strainer and into a mason jar and then set it aside until you are ready to make your cocktail.

How to make a Thyme and Grapefruit cocktail

Once you've made the thyme simple syrup, you're ready to get shakin'- well, or stirring, in this case!

Start by wetting the rim of your glass with a little bit of grapefruit juice. Then dip the rim in a little plate of sugar. If you have turbinado sugar, use that. The large graininess is so pretty on the glass, but really any sugar will work just fine.

Fill the glass about ¾ full with ice. Then add the vodka, thyme simple syrup and grapefruit juice and stir it all together.

Top it all with sparkling water and give it a gentle stir.

Top it with a sprig of thyme and serve!

Ingredients
  

Thyme Simple Syrup
  • ½ cup Water
  • ½ cup sugar
  • 5 sprigs Fresh Thyme
  • pinch salt
Cocktail Ingredients
  • 2 oz Vodka
  • 1 oz Thyme Simple Syrup
  • 2 oz Grapefruit Juice
  • 2 oz Sparkling water

Method
 

Thyme Simple Syrup
  1. Bring Water to a boil.
  2. Turn off heat and add sugar and pinch of salt and stir until it has dissolved.
  3. Gently Roll sprigs of thyme in your hands and then add to the sugar water mixture.
  4. Stir the thyme into the sugar and water mixture and let it steep until the mixture cools.
  5. Once cooled, strain the thyme simple syrup into a jelly or mason jar.
  6. Store in the fridge until you are ready to use!
Cocktail
  1. Wet rim of lowball glass with a little bit of grapefruit juice and then dip it in plate of sugar of your choice. I like the big grainy sugars!
  2. Fill glass with ice.
  3. Add vodka, simple syrup and grapefruit juice and stir together.
  4. Top with sparkling water. Give it a gentle stir, and serve with a sprig of thyme.
