This Breakfast Bacon Jam isn’t just for breakfast! It could just as accurately be called, “Bacon Jam for Burgers”, or “Bacon Jam to spice up your veggies.” It is also an insane addition to a BLT or breakfast sandwich. The bottom line is that it is smoky and sweet and I mean, it’s bacon, so how bad can it be?! ????
One should not limit their bacon eating to a specific time of day. It can be for breakfast, but it can also be for lunch, dinner, snack, you get the point. It is sweet and smoky and a little bit tangy. Mmmm. Allllll the good things. Tonight I am making it to go on roasted Brussel sprouts. If you know someone who is not a fan of Brussel sprouts, that this may be the secret to converting them. If that someone is you, I dare you to try it! ????
Why is it Called “Breakfast Bacon Jam?”
Why is it called Breakfast Bacon Jam? Well, I am glad you asked! It is because several of the main ingredients are key breakfast staples. This recipe calls for bacon (shocking), orange juice and coffee. I know it sounds strange, but please don’t close this page! I promise, the orange juice adds a sweet acidity and the coffee adds a dark richness that together with the smoky bacon, just works! Pleeeeease trust me on this.
Start with a pound of your favorite bacon. Trav loves the maple bacon because the man can just not get enough sweets. But use whatever you like. The Hatch chile or Hot bacons are also so good with that little extra layer of heat with the sweet. Let’s be honest, you just can’t go wrong with bacon, so grab a pound and let’s move on.
How to Make it…
Chop your bacon into about 1/2 inch pieces. Chop your shallots into about 1/8 inch rings. It isn’t an exact science, so don’t stress. Just chop. Brown the bacon in the pan until it starts to brown, but is still soft. Add your shallots and cook this all together for about 15 minutes. The bacon should brown up and the shallots should soften and cook down. At this point add your orange juice, coffee, balsamic and brown sugar. Stir it all up and let it sit on medium low. It should be enough that the liquids are bubbling gently. Make sure you stir it every minute or so to make sure it keeps from scorching. The last 4 ingredients you added are all very sweet and it is a fine line between caramelizing and scorching. I don’t mean to scare you, just stir every once in a while (I like to use a rubber scraper) and you will be fine. That’s really all there is to it! Cook it down until it is thick and jammy and boy oh boy, are you in for a treat!
Now, what to do with it…
Oh-em-gee. What NOT to do with it, is the question! Like I said, tonight I am putting it on roasted Brussel sprouts, but there are SO many ways to use this deliciousness. This is also great Bacon Jam for Burgers, BLT’s, breakfast sandwiches and more! However you decide to use it, I hope you love it!

Breakfast Bacon Jam
Ingredients
- 1 lb. Maple Bacon Cut into ½ inch pieces
- 4 Shallots, chopped in thin rings
- ¼ Cup Orange Juice
- ¼ Cup Coffee
- ½ Cup Brown Sugar
- 1 Tbsp Apple Cider Vinegar
Instructions
Bacon Jam
- In a medium sauté pan, cook the bacon until browned, but not super crispy.
- Remove bacon from pan and drain on paper towel.
- Drain all but about 1 Tablespoon of Bacon grease from the pan. This isn't super specific, so just eyeball it.
- Add shallots to the pan and cook them on medium heat for about 10 minutes until they are soft and starting to caramelize.
- Add the Bacon back into the pan, as well as the Brown Sugar, Coffee, Orange Juice and Apple Cider Vinegar. Stir it all together.
- Bring it to a boil and then reduce the heat to medium low and let it simmer for about 10 minutes until has reduced and gotten sticky and jammy. Stir it every couple of minutes.
- Remove it from heat and put it into a jar, or glass storage container until you are ready to use it.
- Enjoy!
Notes
- Feel free to use whichever Bacon you like. Hot Bacon is also a delicious choice to add a little spice to the smoky sweetness of the jam.
- As it cools, it will get thicker and stickier, so don’t worry if it is still a little runny when it is still warm.
