If you like Ahi Poke and you like Nachos, I promise these are going to be your new favorite appetizer-or meal! These Poke Nachos feature crispy wonton wrappers topped with chunks of Ahi Tuna, Avocado, jalapeño with a ginger soy glaze and a spicy mayo. Just a few simple ingredients, but if you’re like me, the flavors and textures are a combo that you won’t be able to get enough of!
The Ingredients
Frozen Ahi Tuna
Although Tuna doesn’t generally doesn’t have issues with parasites, you can eliminate any risk almost completely just by purchasing frozen Ahi. You can find it at most nice grocery stores, Seafood markets or your local butcher. If it is frozen, this means that it was flash frozen on the boat right after being caught. This preserves it’s freshness, flavor and texture. In this case, frozen is actually fresher than fresh!
Wonton Wrappers
You can make your own, or you can easily purchase them at most grocery stores. I was only able to find Vegan Wonton Wrappers this time, but they work just as well!
Jalapeños
You can use freshly sliced Jalapeños, or Jalapeños in a jar. Both options are delicious. The fresh Jalapeños are definitely prettier, but for this batch I used the Sweet Hot Jalapeños from Trader Joe’s. They are both delicious options, so use whatever you prefer! Just make sure that if you use jarred jalapeños, you dry them before putting them on your nachos. Because, nobody likes a soggy nacho!
Avocado
Fresh, diced Avocado. I know I don’t have to explain this one. Avocado adds a buttery creaminess that is a staple ingredient for all nachos!
Ginger Soy Glaze
This is similar to the very popular Poke Sauce. It is easily made with just a few ingredients. Soy sauce, sesame oil, rice vinegar, garlic, ginger and a little brown sugar. It is so delicious and adds a sweet and salty Asian flavor. But, if you would rather, you can use a teriyaki sauce instead. It won’t have quite the same flavors, but it will still be delicious!
Spicy Mayo
This is also easily made from just Mayonnaise and Sriracha Sauce. It is yet another layer of creamy flavor.
Green Onions
These are a garnish that adds a bit of color and flavor. A perfect way to top it all off.
How to Make the Poke Nachos
Really the only part of this recipe that takes any time or effort is preparing the wontons. To do this, simply add about 2 inches of Vegetable Oil to a pot with high sides. I like to use a large stock pot just because I am a wimp when it comes to frying. I like to make sure the sides of the pot are high enough that if the oil bubbles up or splatters, it will be contained. This is especially important if you are using a gas stove.
To fry the wontons, simply heat the oil to 350°. Use a thermometer to make sure you are at the right temperature. Oil that is not hot enough will make greasy wontons and oil that is too hot will burn them quickly. 350° is the sweet spot. Pop in about four wrappers at a time. Fry them for a minute or 2 on each side, until they brown and puff up. Use a spider strainer to remove the wonton wrappers and place them on a plate lined with a paper towel. You can also use tongs if you don’t have a Spider, just be careful because they will be hot!
Once the wonton wrappers have cooled, place them on a platter and top them with the cubed Ahi and Avocado, and sliced jalapeños. Drizzle the Ginger Soy Glaze and Spicy Mayo over the top and sprinkle with Green Onions. That is it!!!
Make sure you serve them immediately. I say this partly so they don’t get gobbled up before they make it to the table, and partly just because these are best served FRESH! Enjoy!

Poke Nachos
Ingredients
- 4 Cups Vegetable Oil Just enough to fill the bottom 2 inches of your pot.
- 25 Wonton Wrappers
- 5 Ounces Frozen Ahi Tuna, thawed
- 1 Avocado cut into ¼ inch cubes
- 1 Fresh Jalapeño, sliced thinly or ¼ Cup Jalapeños from a Jar
- 1 Green Onion, sliced thinly
- ½ Cup Mayonnaise
- 1 Tbsp Sriracha Sauce
Ginger Soy Glaze
- ⅛ Cup Soy Sauce
- ½ Cup Water
- 1 Tbsp Rice Vinegar
- 1 tsp Toasted Sesame Oil
- 1 tsp Fresh grated ginger
- 1 Garlic clove, minced
- 2 Tbsp Brown Sugar
- 1 Tbsp Corn Starch
- ⅛ Cup Cold Water
Instructions
Won Tons
- Heat Oil in a heavy Stock Pot or Dutch Oven to 350°
- Add wonton wrappers 4 at a time, making sure they stay separated.
- Fry for about 1 minute per side, so that both sides are browned.
- Remove them carefully from the oil and place them on a plate lined with a paper towel. If you are using a gas stove, turn the gas burner off when you remove the wontons. Turn it back on before you add the next batch of wonton wrappers to the oil.
- Continue until all wonton wrappers are browned.
Ginger Soy Glaze (You may use Teriyaki Sauce instead if you prefer)
- Add all ingredients except cornstarch and ⅛ cup of water to a saucepan on medium heat.
- While these ingredients are heating, mix together the cornstarch and ⅛ cup water. Stir until cornstarch is dissolved.
- When soy sauce mixture begins to simmer, add cornstarch and water mixture.
- Stir to combine and bring to a simmer. Simmer until it reaches desired thickness.
- Remove from heat.
- Once it has cooled completely, add a little of the sauce to a bowl with the cubed Ahi to marinate it slightly.
- Set aside remaining sauce for later.
Assembling the Poke Nachos
- Lay fried wonton wrappers in a single layer on a large platter.
- Top Wontons with Ahi Tuna, Avocado and Jalapeños, so that all wontons have a little of each.
- Drizzle wontons with Spicy Mayo and Ginger Soy Glaze.
- Sprinkle Green Onions over all wontons.
- Serve and Enjoy!
