Is there anything that is more of an iconic sign that fall has arrived than a Pumpkin Spice latte? The warm spices of cinnamon, ginger, cloves, nutmeg with a rich caramel sweetness of brown sugar just brings all the feelings of cozy sweaters, boots and nostalgic pumpkin patch experiences bubbling up. This Pumpkin Spice Syrup recipe is so easy to whip up and will allow you to feel this all season long!
Ingredients
- Water
- Brown Sugar
- Pumpkin Puree
- Pumpkin Pie Spice
- Vanilla
- Salt
How to Make Pumpkin Spice Syrup
- Start by Bringing 1 Cup of water to a boil.
- Once it comes to a boil, turn down the heat so that it is reduced to a very gentle boil.
- Then whisk in 1 cup of brown sugar and let it continue to gently boil uncovered for 5 minutes, stirring occasionally.
- After 5 minutes, remove it from the heat and whisk in the pumpkin puree, pumpkin pie spice, vanilla and a pinch of salt.
- Continue to whisk it until the syrup is smooth.
- Pour the syrup into a jelly jar, or sealed glass container, or pour it into one of these little cork topped bottles like I did for sweet little gifts!
- Once the syrup has cooled, place in the refrigerator where it will last for about a month.
What is Pumpkin Spice?
Pumpkin Spice (or Pumpkin Pie Spice) is a combination of Cinnamon, Nutmeg, Cloves and Ginger. In some brands you will find Cloves, Cardamom or Allspice as well. It is so convenient and much cheaper to buy Pumpkin Pie Spice for recipes such as this because buying each individual spice can be costly and in some cases some of the individual spices may be hard to find.
What to do with Pumpkin Spice Syrup?
Well, the obvious answer is to add it to your coffee! If you have an espresso machine, (I LOVE my Breville!!) you can make your very own Pumpkin Spice Latte! Not only will you be able to control the sweetness and know exactly what is in your coffee, but you will save so much money! You have made a high quality syrup, so make sure you use a high quality coffee bean like the ones you can buy from Freelance Coffee Project.
Another option is to add a small amount of Pumpkin Spice Syrup to apple cider for a spicy sweet treat. And what IMHO is even better, is adding a little bit of syrup to hot apple cider and then sneak a little bourbon in! I can’t think of a better fall/cold weather hot toddy to warm you up from the inside!
Or…drizzle a little over a scoop of vanilla ice cream and sprinkle on some pecans for the easiest fall dessert ever!
How about mixing some pumpkin spice syrup with softened butter to create a pumpkin spice butter that would be delicious slathered on these Pumpkin Muffins.
And my current go to salad right now is to toss some chopped apples with a little bit of this Pumpkin Spice Syrup and put them on a salad made with mixed greens, a little gorgonzola and pecans. It is so good and a nice change up from the standard summer salad.
Does Pumpkin Spice Syrup have to be Refrigerated?
Yes. It does. The reason we love making homemade Pumpkin Spice Syrup vs buying Torani or Starbucks syrups is because we know exactly what is going into it. We don’t add artificial preservatives like sodium benzoate or potassium sorbate to preserve freshness. So, the drawback to keeping it natural is a shorter shelf life, and a need to keep it refrigerated.
The good news is that you are going to love this syrup so much it won’t last long anyway!! 🙂 Also, it gives you the opportunity to share a lovely gift if you want to fill a little bottle to give away.

Notes
Notes:
- If you don’t have pumpkin pie spice, you can use 1 tsp ground cinnamon, 1 tsp ground nutmeg 1/2 tsp ground cloves, 1/2 teaspoon ground ginger.
- Make sure you use Pure Pumpkin Puree and not a pumpkin pie filling!
- This would make a great gift to someone special (teacher? friend?) bottled in a pretty glass container and put in a basket with a locally made mug, candle and some of your favorite coffee beans!
