Lavender Syrup

This Lavender Syrup is sweet and light and deliciously floral. It adds a little something special to anything from a lavender latte, to whipped cream, to a refreshing cocktail or mocktail! It it is quick and easy to make and will keep in your fridge for a month!

What is Lavender Syrup?

This lavender simple syrup is a sweet and floral syrup made with fresh or dried lavender, water, honey, sugar and a pinch of salt. It is rich and herbaceous and works perfectly in anything from coffee to cocktails! Or... if you really want to blow the taste buds and the minds of your guests, top a tangy lemon pie with an excessive dollop of lavender whipped cream. Yeah.

Ingredients

  • Water- Just regular old water. If your water tends to be more minerally, or not one you drink without filtering, use filtered water.
  • Sugar- White cane sugar works well. If you are limiting your sugar intake, you can use stevia or monkfruit sweetener, although you may have to add a little xantham gum to keep it from crystallizing as it cools.
  • Honey- Just a little bit to add another dimension of texture and sweetness!
  • Fresh or Dried Lavender- You will need more if you are using fresh, but either form works! Just make sure that you are using culinary lavender that is organically grown without pesticides.
  • Pinch of Salt- Just a teeny pinch to bring out the flavors and add a little something that only a pinch of salt can do!

How do I make lavender simple syrup?

Can you boil water? Then you can make this lavender syrup! It is as easy as that! You will simply:

  • Bring water, sugar and honey to a boil.
  • Boil gently for 5 minutes to dissolve sugar and allow it to thicken up a bit.
  • Add the lavender and pinch of salt.
  • Turn of the heat and let the lavender steep in the syrup for 20-30 minutes while it cools.
  • Strain the lavender out and pour the syrup into a Jar.
  • Keep it in the fridge for up to a month.

What do you do with Lavender Simple Syrup?

Lavender is such a versatile herbal flower. It is prized not only for its unique fragrance, but for its soft, floral flavor as well. It is a perfect pairing with lemon. Use some of this lavender simple syrup in your fresh lemonade for an extra layer of deliciousness.

How about a vodka or gin cocktail with lemonade, sparkling water and a little lavender simple syrup? Or check out this Thyme and Grapefruit Cocktail for another herby and citrusy cocktail. Umm, yeah, is it happy hour yet...??

In this recipe for Citrus Glazed Orange Cardamom Cake, simply use this lavender simple syrup in place of the citrus simple syrup to add a yummy spring floral flavor!

And finally...have you ever had a lavender latte? If you haven't, please tell me you will try this! You can buy one at Starbucks, but I guarantee you can make a better one! Use a high quality specialty coffee like Freelance Coffee Project to make it over the top delicious.

Simply heat a cup of milk on medium low heat so that it heats gently. Stir occasionally for about 3 to 5 minutes. When it starts to simmer, add ยผ cup of lavender simple syrup and ยผ teaspoon of vanilla extract.

Add your desired amount of lavender milk to your coffee, or 2 shots of espresso. If you are feeling a little extra, add a dollop of lavender whipped cream on top!

You can also make an iced version by topping your cold brew with a little lavender simple syrup (adjust it to your desired sweetness) and adding a little cream. Yum!

Lavender Syrup

This recipe uses just a few ingredients and is so easy to make! It is and sweet and lightly floral. It can be used in anything from whipped cream, to your morning latte, to a happy hour cocktail! It will last in your fridge for up to a month, and always good to have on hand!

Ingredients
  

  • 1 Cup Water
  • 1 Cup Sugar

Method
 

  1. Bring the water, sugar and honey to a boil over medium high heat.
  2. Once it starts boiling, turn the heat down to medium and boil lightly for 5 minutes.
  3. After 5 minutes, remove from heat and add the lavender and pinch of salt.
  4. Let it steep for 20-30 minutes.
  5. Strain the lavender out and let it cool completely.
  6. Add the syrup to a glass jar and store in the fridge for up to a month.
